Ingredients:
Mutton 1 1/2 lb
Turmeric powder 1 tsp
Dry red chillies 20
Coriander seeds 3 tbsp
Garlic cloves 20
Sour curd 1/2 pint
Onions 4
Juice 1 ripe lemon
Cardamoms 6
Ghee 6 tbsp
Cloves 6
Cinnamon 2 sticks
Coriander leaves 1 small bunch
Ginger 4 inch piece
Salt to taste

Method:
1. Wash and cut up the meat into 2-inch cubes.
2. Slice the onions into thin long pieces.
3. Finely slice ginger and garlic separately.
4. Heat a tsp of ghee on a tava and roast the chilies till dark in color
5. Fry the coriander seeds, garlic and ginger separately in the same way, using just 1 tsp ghee for each ingredient.
6. Keep these fried spices aside.
7. In a large saucepan, heat the remaining ghee and fry the onions till golden brown and crisp, drain and keep aside.
8. Now add the cloves, cardamoms and cinnamon to the ghee and fry, put in the mutton and turmeric powder and salt.
9. Cover and cook till the meat is half cooked.
10. Pour a little water on the lid of the saucepan while cooking to avoid the meat sticking to the bottom.
11. Use a saucepan with a plate shaped lid.
12. Add cord and remaining spices. Mix and cook on a low heat till meat is tender.
13. If necessary, add a cup of warm water, just before serving mix in the lemon juice and fried onion slices.
14. Serve garnished with chopped coriander leaves.

Method:
•First of all take a fry pan add oil then add ginger garlic (chopped), green chilies (chopped) and mix it nicely than add yogurt in it and 1 cup of water.
•Mix up all the items well put cap on the pan and leave it till beef gets soften.
•Get a cup and add Saunf ( Fennel seeds), Jeera ( Cumin seeds ), Kalonji ( Black Onion seeds ), Methi seeds ( Fenugreek seeds ), Rai ( Black Mustard Seeds ), salt, red chilly and blend it properly.
•When the ingredients in the Bowl get to add the dry mixture and mix and cook over low heat.
•Please add the lemon juice and green chilies and cook for a few minutes over low heat, get out of the bowl and garnish with the cilantro, and its ready to serve.

Method:
Wash the met and add yogurt, salt, red pepper, payaya, ginger/garlic paste, cumin, lemon syrup and marinate it.

Leave it for 1 hour.

After 1 hour take seekh put boti in it and cook it.

Method:
Mix all of the batter ingredients together and make a batter and set aside.

1 pound of Minced Ground Beef (Keema) (Halal)
1 ½ tsp. of Jalapeno Peppers (chopped)

½ tsp. Cumin Powder (Pisa Zeera)

1/8 tsp. Black Pepper (Pisi Kaali Mirch) (fresh ground)
¼ cup (1 ounce) Monterey Jack Cheese (shredded)

Method:
Combine ground beef, jalapeno peppers, cumin, salt and pepper; mix lightly but thoroughly. Divide beef mixture into 4 equal portions; shape into ½ inch thick patties, 4 inches in diameter.

Place patties on grid over medium coals. grill 7 to 9 minutes, turning once. Sprinkle 1 tablespoon cheese on each burger 1 minute before end of cooking time.

Place tomato slice on bun bottom; top each with grilled burger and cover with roll top. To check temperature, cautiously hold hand about 4 inches above coals, Medium coals will force removal of hand in 4 seconds.

1 packet Boiled egg noodles 
1/4 kg Chicken boneless cubes 
1/4 kg Prawns 
1 Onion finely chopped 
1 Capsicum 
2 cup Chicken stock 
1/2 cup Cabbage slices 
1 inch piece Ginger chopped 
2-3 cloves Chopped garlic 
2-3 Spring onion 
1 tsp Black pepper crushed 
1/3 tsp Chinese salt 
2 tbsp Corn flour 
3 tbsp Soya sauce 
4 tbsp Oil 
to taste Salt

Method:

Cook the noodles in boiling water with 2 tbsp of oil, strain in a colander and put them under running cold water. Heat oil in a wok and deep fry half of the noodles. In a serving dish first place the boiled noodles and then the crispy noodles on top.. Heat oil in a pan and fry 2-3 cloves of garlic, 1 inch piece of ginger and 1 chopped onion and fry them for 2 to 3 minutes. Then add 1/4 kg of chicken cubes and fry for 2-3 minutes and then add 1/4 prawns and stir fry for 2-3 minutes. 

After that put 3 tbsp of soya sauce, 1 tsp of black pepper, 1/3 tsp of Chinese salt, salt and 2 cups of chicken stock. After it starts to boil add 1 chopped capsicum, 1/2 cup of cabbage slices and 2-3 chopped spring onions and cook them for 3-5 minutes. Then take 2 tbsp of corn flour and dissolve in water and pour slowly in the batter. When the mixture thickens mix in the noodles. In the end garnish with chopped spring onions and serve.

1 tablespoon cooking oil

Directions:

• 1 kg chicken, with bone (12 pieces)
• 2 Tbsp ginger paste
• One and a half tbsp garlic paste
• 150 gm desi ghee
• 1 tsp red chilli powder
• 1 tsp turmeric powder
• 1 tsp black pepper, crushed
• 1 tsp cumin seeds
• One and a half tsp red chilli, crushed
• 1 tsp dry ginger powder
• Salt to taste
• 500 gm tomato
• 1 onion
• 4 green chillies
• 1 cup yogurt
• 1/2 tsp garam masala powder
For garnish:
• 100 gm green coriander
For rotis:
• 500 gm refined flour (maida)
• Salt to taste

Method:

•Wash and clean the chicken.
•Saute ginger and garlic in ghee, and put in the chicken.
•Fry for 2 minutes and then put all the spices except garam masala, along with tomato, onion and green chillies. Now cook on slow flame.
•Then put yoghurt and saute well till little dry, and then add garam masala and cook for 2-3 minutes.
•Garnish with green coriander and serve hot with rotis.
For rotis:

Knead dough. Make rotis.

After this in a bowl add ½ cup corn flour and ½ cup flour. Mix well and coat with that mixture and pour into cool water.

Now once again coat with the mixture of corn flour and flour and deep fry in oil as required.

Ready to serve.

1/2 Kg Chicken

1 Spring onion

2 glass Water
1 cup Corn flour
1/2 cup Oil

1/2 tsp Black pepper powder

2 tbsp Ginger garlic paste

Method:

Heat 1/2 cup oil and saute 2 tbsp ginger garlic paste.

When it changes color, add 1/2 kg chicken and keep stirring on high flame until chicken changes color.

Then add chopped carrot, spring onion, capsicums, 1/4 cabbage, 1/2 tsp black pepper powder and salt to taste and stir for 2 to 3 minutes. Then add 2 glasses of water and cover the pan to allow cooking on medium flame for 8 to 10 minutes.


When chicken is tender, add 1 cup corn flour to thicken the mixture. Delicious Chicken Stew is ready to serve.

Pizza dough Ingredients :
2 cups flour
1 tbsp yeast
1 tsp caster sugar
1 tbsp dry milk powder
4 tbsp oil
½ tsp salt
1 egg
Pizza Sauce Ingredients :
2 tbsp oil
3 cloves garlic, crushed
1 tbsp red chillies, crushed
1 tsp salt
1 tsp oregano
1 onion, chopped
1 tsp sugar
1 cup tomato puree or paste
2 tbsp ketchup
Toppings :
1 cup Chicken tikka chunks
1 onion, sliced
1 capsicum, sliced
1 tomato, sliced
1 cup mozzarella and cheddar cheese
1 tbsp crushed red chillies
Olive oil, to brush
Chilli garlic sauce, to drizzle

Method:

Knead all the above ingredients with lukewarm water and keep covered in an oiled bowl in a warm place, for 1 hour or till well risen and doubled.
Roll out onto a floured surface and line a pizza plate with it. Add sauce, toppings and let rise again in a warm place for 20 more minutes.
Bake at 200 degrees C for 20 minutes or till cheese has melted and dough is cooked.

Pizza Sauce
Heat oil, add onion, sauté add garlic, salt, oregano, sugar, red chillies crushed and a little water, add ketchup and tomato puree and let cook till thick.
Use as pizza sauce or pasta sauce.
To assemble the pizza, roll out dough and brush with olive oil, sprinkle some cheese on top, top with sauce and chicken tikka chunks, onions, tomatoes and capsicums, more cheddar and mozzarella cheese and some crushed red chillies.
Sprinkle some chilli garlic sauce.
Bake for 20 minutes on 180 degrees C or till done.

For Lemon chili Sauce:

Honey 2 tbsp
Chili paste 1 tbsp
Stock 1 cup
Chopped Garlic 1 tbsp

Parsley / Green coriander  2 tbsp

Method:

In bowl take ½ kg boneless chicken along with 1 tbsp soya sauce, 1 tsp black pepper, ½ tsp salt, 1 tsp brown sugar, 4 tbsp corn flour, 1 tsp garlic paste, ½ tsp oregano. Smudge and mix well.

After this fry them and dish out.

Now for sauce making: heat 1 tbsp oil in a frying pan and add 1 tbsp chopped garlic.

Along with 1 cup stock, ½ cup lemon juice, 2 tbsp honey and 1 tbsp chili paste. Mix well.

Pour 2 cups boiled rice and add sauce in chicken, mix well.

In the end add chicken in boiled rice along with this sprinkle 2 tbsp Parsley or green coriander.

Method:

Boil 300 gm rice and keep aside.

Cut 1 onion, 1 capsicum, 125 gm green beans, 3 green chilies and 1 carrot into juliennes.

In a wok heat 3 tbsp oil, add 1 piece of chopped ginger and 3 – 4 cloves of garlic. Fry well till golden brown.

Now add 300 gm prawns, fry well till its color turn to white. Now add all the sliced vegetables.

Also add ½ cup boiled peas and cook for 2 – 3 minutes.

Add in 2 beaten eggs.

Now add 300 gm boiled rice, salt to taste, 2 tbsp Worchester shire sauce, 2 tbsp soya sauce and 1 tsp crushed black pepper.


Mix well and dish it out. Serve hot.

• 2lbs ground chicken 
• 1/2 cup diced onion 
• 1/2 cup chopped parsley 
• 1/3 cup bread crumbs 
• 4tsp ground coriander 
• 1tsp nutmeg 
• 1tsp cumin 
• 1tsp red pepper flakes 
• 1tsp minced garlic 
• 1/2 tsp salt 
• 1/2 tsp pepper 
• 12 skewers, (soaked for at least an hour)

Method:

In a large bowl, combine all the kofta ingredients and mix well. 
Place 1/3 cup of the mixture in the palm of your hand and roll between your two hands to make a cylinder or tube like shape about 4" long and about 1" in diameter. 
Insert one of the pre-soaked skewers up the center of the chicken kofta kebab just until it begins to poke out the other end. 
Clean and oil the grates and preheat the grill to 525 degrees Fahrenheit. When the grill is heated up, place the kebabs on the grill and close the lid. 
Every 5 minutes rotate the kofta kebabs so all sides cook. 
After 10 - 12 minutes they'll be fully cooked and can be removed from the grill. 
Serve this with a creamy garlic cucumber sauce and some pita, tortilla shells or buns. 
You can also consider chopped tomato, onion, cucumber or other toppings.

1 cup Peas 
100 gm Plums 
as required Hot spices 
1 tsp Mace & Netmeg powder 
1/2 tsp Cardamon powder 
2 tbsp Ginger garlic paste

Method:
In a pan, heat 1/2cup clarified butter and fry onions till they turn golden brown, and 
take out half onions out of the pan. In remaining onions, add 2 tbsp ginger garlic paste, 1/2 kg chicken and hot spices as required. 

Soak rice for half an hour. Chop 1/2 bunch of coriander, 1/2 bunches of mint and 250 grams green chilies in a chopper. 

When chicken color turns white, add all the chopped mixture in it and also include 1 cup peas. Boil rice in a different pan. 

When chicken is properly cooked, turn off the stove. 

When rice are almost ready for biryani, in chicken gravy, add a layer of yogurt, 1 tsp mace and nutmeg powder, 1/2 tsp cardamom powder, rest of the golden brown onions, 100 grams plums and 2 tbsp kewra. 

Put layer of rice over it. Pour rest of the clarified butter on rice and flatten it and allow simmering for 10 to 12 minutes. Delicious Green Chicken Biryani is ready.

Take 30 minutes toget ready
Sheer means sweetened milk and khurma is made from dried dates. It is Eid special dessert. This special dish is served on the morning of Eid day in the family after the Eid prayer as breakfast, and throughout the day to all the visiting guests.

Ingredients

100 grams dry vermicelli,broken in small pieces
1 tbsp ghee/oil
3 litre milk
250 gm. sugar
10-12 tbsp rice flour/ground rice
4-5 green cardamoms(grind the seeds)
1 cup milk powder
100 gm. dried dates, soaked overnight, pitted and chopped thin
50 gm. almonds, blanched and slivered
50 gm. white raisins shopping list
50 gm. pistachios
50 gm. whole coconut,thinly sliced
1 tsp kewra

How to make it

Heat ghee in a large pot over a low flame.
Fry the vermicelli in the ghee, stirring so it turns golden brown(Watch it carefully so it does not burn).
Remove vermicelli from the pan and set aside.
Pour in the milk in the same pan.
Bring to a boil,then add sugar,ground cardamoms,ground rice(dissolved in little milk).
Cook on medium flame,stirring occasionaly until the milk starts to get little thick.
Add the sliced dates,almonds,raisins,pistachios,coconut and the roasted vermicelli.
Cook for about 4-5 minutes or until the vermicelli starts to get flexible.
Turn off the heat.Add kewra and mix well.
Transfer to a serving bowl,garnish with extra nuts.
Serve hot.

INGREDIENTS :

Milk 1 liter
National vermIcelli ½ cup
Ghee 1 tbsp
White Cardamom 3
Dry Dates 4 slIced
Pistachio slIced 3 tbsp
Almonds slIced 3 tbsp
Saffron ½ tsp
Sugar ½ cup heaped
Khoya 2 tbsp

How To Cook Shahi Sheer Khurma :

1. Heat up ghee.
2. Add white cardamom with vermicelli and brown it.
3. Then add milk with sliced dry dates, cook for 5 minutes.
4. When dates turn into soft; add sugar, khoya, almonds, pistachios and saffron.
5. Cook for 5 minutes more.
6. Royal sheer khurma is ready serve hot or cold.

Eid Special Sheer Khurma Recipe In Urdu

Vegetable Garlic Chicken


Ingredients:

300 gm Boneless Chicken 
1 Capsicum 
1 Carrot 
2 Spring onions 
1 cup Water 
1/4 Cabbage 
3-4 Green chilies 
1/4 bunch Fresh coriander 
10-12 Cloves Garlic 
1 tbsp Red chili flakes 
2 tbsp Worcestershire sauce 
2 tbsp Corn flour 
4 tbsp Oil 
4 tbsp Chili garlic sauce 
to taste Salt

Method:

Cut 300 grams chicken into pieces. Chop a capsicum, carrot, 2 spring onions, 1/4cabbage, 3 to 4 green chilies and 1/4 bunch fresh coriander finely. Slice 10 to 12 cloves of garlic. Heat 4 tbsp oil in a pan and saute sliced garlic. 

When garlic is a nice golden brown, add chicken pieces and cook for 4 to 5 minutes. Then add all vegetables and cook for another 4 to 5 minutes. Then add 1 tbsp crushed black pepper, 2 tbsp Worcestershire sauce, salt to taste and 4 tbsp chili garlic sauce and stir continuously for 2 to 3 minutes. 

Then add water and bring to a boil. When water begins to boil, add 2 tbsp corn flour and continue stirring. Increase the flame and saute for 3 to 4 minutes. Vegetable Garlic Chicken is ready to serve.

Ingredients:

Chicken 1 kg
Bhavnagri green chillies 250 grams
dry red chilies 4-5
Fenugreek seeds 1/4 teaspoon
Mustard seeds 1 teaspoon
Fennel seeds (saunf) 1 teaspoon
Onion seeds (kalonji) 1/2 teaspoon
Salt to taste
Turmeric powder 1/2 teaspoon
Yogurt 1/2 cup
Oil 3 tablespoons
Onion 3 medium
Ginger-garlic paste 1 tablespoon
Red chilli powder 1/2 teaspoon
Coriander powder 1 tablespoon
Method:

Grind red chillies, fenugreek seeds, mustard seeds, fennel seeds and onion seeds coarsely.

Slit the large chillies, keeping the stems intact, and add to the chicken and mix.

Set this aside in a refrigerator to marinate for 1 hour.

Heat oil in a pan.

Cut onions into small cubes and add. Sauté lightly.

Add ginger-garlic paste and sauté till lightly browned. Add red chilli powder and coriander powder and sauté, add the remaining ground spices and stir. Add marinated chicken along with the marinade and stir well.

Add 1 cup water and mix well. When it comes to a boil, cover and cook on low heat for 15 minutes or till the chicken is completely done. Let it stand for 10 minutes and then serve.

Ingredients:

½ kg boneless chicken
4 green chilies
1 cup corns
1 packet of cheddar cheese
½ cup yogurt
½ cup tomato ketchup
1 tsp hot spices powder
1 tsp ginger garlic paste
1 tsp crushed coconut
1 tbsp papaya paste
½ tsp salt
2 tsp red chili powder
2 tbsp olive oil
2 tbsp mustard oil

For dough
1 egg
2 cup flour
½ tsp baking powder
½ tsp salt
4 tbsp oil
Water as required

Method:

Mix ½ kg chicken pieces with 2 tsp red chili powder, ½ tsp salt, ½ cup yogurt, 1 tsp papaya paste, 1 tsp hot spices powder, 1 tsp ginger garlic paste, 2 tbsp olive oil and 1 tsp crush coconut and marinate. Cook it for 10 minutes in a covered pan. When chicken is properly cooked, take it out in a bowl. Add 1 cup corn, 2 tbsp mustard oil, 4 green chilies and ½ cup tomato ketchup and mix.

To form dough, mix together 2 cup flour, 1 egg, ½ tsp baking powder, ½ tsp salt and 4 tbsp oil with luke warm water as required. Then equally divide the dough into 6 pairs and leave it for half an hour. Roll them into shape of a small roti and fill it with the mixture. Sprinkle 1 packet shredded cheddar cheese on them. Bake it for 15 minutes in a pre heated oven at 200c. Bihari Chicken Spring Roll is ready to serve.

Ingredients
225g butter, softened,
plus extra for greasing
225g caster sugar
4 large free-range eggs
100g self-raising flour
1 tsp baking powder
2 tbsp cocoa powder
A little milk
For the icing
250g dark chocolate
250g butter, softened
175g icing sugar

Method
1. Preheat the oven to 180°C/fan160°C/gas 4. Grease 2 x 20cm sandwich tins with a little butter and base line with baking paper. In a bowl, beat together the butter and sugar with an electric hand whisk until light and fluffy.
2. Add the eggs, 1 at a time, beating after each addition. Sift in the flour, baking powder and cocoa, then lightly fold into the mixture.
Add a little milk until you have a dropping consistency, then divide between the tins.
3. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
4. Melt the chocolate in a bowl over a pan of simmering water, then cool slightly. In a bowl, beat the butter and icing sugar together with an electric hand whisk until light and fluffy, then fold in the melted chocolate.
5. Spread some icing over 1 of the cakes, top with the other cake and the rest of the icing.

1 pound boneless chicken tenders
vegetable oil for deep frying
1/3 cup all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons vinegar
1/4 teaspoon baking soda
1/3 cup water

How to make Chicken Nuggets:
Cut chicken into nugget-size pieces, about 1×1/2-inch. Put oil in deep fryer or put about 2 to 3 inches in a Dutch oven; heat to 360°. Mix flour with salt in a small bowl. Mix vinegar with baking soda. Add vinegar mixture and water to the flour mixture; beat until smooth. Dip chicken pieces into batter; allow excess batter to drip off into the bowl. Fry chicken nuggets, 4 to 6 at a time, until golden brown, or about 4 minutes for each batch.

Receipe Ingredients
1 kg Chicken
5 to 6 Green chilli
1 1/4 cup Yogurt
1 tbsp Garlic paste
1 tbsp Ginger paste
2 tbsp Genger juliennes
as required Oil or Ghee
1 packet National white karahi masala

Recipe Method
Heat oil, fry 1 tbsp of each ginger and garlic paste. Add 1 kg chicken and fry for 5 minutes. Now add 1-1/4 cup yogurt and 1 packet of National White Karahi Masala. Cook on low flame till chicken is tender. Also add some water if required. Then add ginger juliennes and 5 to 6 green chilies. Simmer for 5 minutes. Lastly garnish with chopped coriander leaves and serve with Nan.
