Ingredients
1 tbs olive oil
6 chicken thigh fillets, coarsely chopped
1 red onion, thinly sliced
2 tsp ground cumin
2 tsp ground coriander
2 tsp smoked paprika
12 small corn tortillas
1 cup (250ml) tomato passata
1/2 cup (40g) coarsely grated cheddar
Sour cream, to serve
Mixed salad leaves, to serve

Avocado salsa
1 ripe avocado, halved, stoned, peeled, finely chopped
2 ripe tomatoes, seeded, finely chopped
1/2 red onion, finely chopped
1 tbs finely chopped jalapeño chilli
1 tbs lime juice
1/4 cup coarsely chopped coriander

Method

Step 1
Preheat oven to 200°C. Heat the oil in a large frying pan over high heat. Add one-third of the chicken and cook, stirring, for 2-3 minutes or until browned and cooked through. Transfer to a bowl. Repeat with remaining chicken in 2 more batches. Return chicken to the pan with the onion, cumin, coriander and paprika. Cook, stirring, for 2-3 minutes or until heated through.

Step 2
Brush a tortilla with a little of the tomato passata. Top with chicken mixture and roll to enclose filling. Place enchilada, seam-side down, in the base of a 6-cup capacity baking dish. Repeat with remaining tortillas and chicken mixture. Spoon the remaining tomato passata over the enchiladas and sprinkle with cheese. Bake in preheated oven for 15 minutes or until heated through.

Step 3
Meanwhile, to make the avocado salsa, combine the avocado, tomato, onion, chilli, lime juice and coriander in a medium bowl. Taste and season with salt and pepper.

Step 4
Divide enchiladas among serving plates and top with salsa. Dollop with sour cream. Serve immediately with salad leaves, if desired.

100g beansprouts, trimmed
1/2 cup coriander leaves

lime wedges, to serve

Method Notes

Step 1
Place noodles into a heatproof bowl. Cover with hot water. Stand for 10 minutes or until just tender. Drain. Set aside.

Step 2
Combine cornflour and paprika. Sprinkle over tofu. Heat a wok over medium-high heat. Spray with oil. Cook tofu for 1 minute each side or until golden. Cut into cubes.

Step 3
Spray wok with oil again. Combine chicken and stir-fry paste. Stir-fry, in batches, for 1 minute or until golden. Set aside.

Step 4
Spray wok with oil. Whisk eggs and fish sauce. Add to wok with noodles. Stir-fry for 1 minute or until egg begins to set.

Step 5
Add tofu, chicken and onions. Stir-fry for 2 minutes. Stir in sprouts and coriander. Sprinkle with nuts. Serve with lime wedges.

Step 1
Heat a wok or large frying pan over high heat. Add oil and heat until just smoking. Swirl to coat. Add half the chicken and stir-fry for 3 minutes or until just cooked through. Transfer to a plate. Repeat with the remaining chicken, reheating the wok between batches.

Step 2
Add onion and garlic to the wok. Stir-fry for 3 minutes or until onion is soft. Add the carrot and zucchini, and stir-fry for 3 minutes or until just tender.

DIRECTIONS

DIRECTIONS

STEP 1
Soak eight 6-inch-long wooden skewers in water, 10 minutes. In a bowl, combine orange juice, mirin, soy sauce, vinegar, chile, and ginger. In another bowl, marinate shrimp in 3 tablespoons sauce, 10 minutes.

STEP 2
In a large pot of boiling salted water, cook noodles according to package instructions. Drain and rinse noodles with cold water.

DIRECTIONS

STEP 1
In a resealable plastic bag, combine chicken, zucchini, onion, oil, oregano, and 2 tablespoons vinegar; season with 1/2 teaspoon salt and teaspoon pepper. Marinate at room temperature for 30 minutes (or refrigerate up to overnight).

STEP 2

DIRECTIONS

STEP 1
Set up grill for indirect grilling. Rinse chicken inside and out and dry thoroughly. Generously season inside and out with coarse salt and ground pepper. Clean and lightly oil hot grates.

STEP 2
Place chicken, breast side up, on opposite side of grill from heat. Cover and grill until cooked through, or a thermometer inserted in the thickest part of a thigh (avoiding bone) registers 160 degrees, about 1 1/2 hours, rotating halfway through cooking (if using a charcoal grill, add a couple of handfuls of charcoal every half hour to maintain heat).

INGREDIENTS :
½ kg boneless Chicken
4 green chilies
1 cup Corns
1 packet of Cheddar cheese
½ cup yogurt
½ cup Tomato ketchup
1 tsp hot spIces powder
1 tsp Ginger Garlic paste
1 tsp crushed Coconut
1 tbsp Papaya paste
½ tsp Salt
2 tsp red chili powder
2 tbsp olive Oil
2 tbsp mustard Oil

For dough
1 egg
2 cup flour
½ tsp Baking powder
½ tsp Salt
4 tbsp Oil
Water as required

How To Cook Bihari Chicken Spring Roll :Mix ½ kg chicken pieces with 2 tsp red chili powder, ½ tsp salt, ½ cup yogurt, 1 tsp papaya paste, 1 tsp hot spices powder, 1 tsp ginger garlic paste, 2 tbsp olive oil and 1 tsp crush coconut and marinate. Cook it for 10 minutes in a covered pan. When chicken is properly cooked, take it out in a bowl. Add 1 cup corn, 2 tbsp mustard oil, 4 green chilies and ½ cup tomato ketchup and mix.

To form dough, mix together 2 cup flour, 1 egg, ½ tsp baking powder, ½ tsp salt and 4 tbsp oil with luke warm water as required. Then equally divide the dough into 6 pairs and leave it for half an hour. Roll them into shape of a small roti and fill it with the mixture. Sprinkle 1 packet shredded cheddar cheese on them. Bake it for 15 minutes in a pre heated oven at 200c. Bihari Chicken Spring Roll is ready to serve

1 ½ cup Spaghetti (cooked)
¼ cup Bread crumbs

6 tbsp all purpose flour
1tsp paprika
Pinch of ground Nutmeg
¾ tsp Salt
½ tsp ground black pepper
1 ¾ cup Chicken broth
1 cup evaporated Milk
¾ cup parmesan cheese

How To Cook Chicken Tetrazzini Recipe :
1.Combine bread crumbs with 1 tbsp of butter and set aside. 
2.Heat 1 tbsp of butter in a frying pan and stir fry mushrooms and chicken with lemon juice for 15 min until chicken have been cooked. 
3.Add spaghetti and mix well. Transfer it into the suitable casserole dish. 
4.Heat remaining butter in another sauce pan and roast flour for just 2-3 min until pleasant roasting smell starts to come but flour should not turn into brown in color. 
5.After that add all the spices including paprika, nutmeg, salt, black pepper and broth and stir well so that lumps would not form. Simmer the sauce for 5-10 min until it gets thick and starts bubbling. 
6.Now add milk and mix it well in the sauce, pour this sauce over the chicken spaghetti mixture. 
7.Sprinkle prepared bread crumbs and Parmesan cheese on top and bake for 25 min until become brown from top.

1 chicken cut into pieces

3 small black cloves

5 red dried chilies

1/2 pint of natural yogurt

2 cloves ground crushed garlic

11/2 teaspoons chili powder

1/8 cup of butter

2 teaspoons salt

1/2 teaspoon powdered red food coloring

1 teaspoon ground ginger

Procedure:The cloves and dried chilies are to be roasted, ground and set aside. Mix the yogurt, salt, food coloring, ground ginger, garlic, and chili powder and the ground ingredients are to be thoroughly mixed. Place the chicken pieces in a dish and pour the yogurt over. Leave to marinate. Smear a large piece of foil with butter. Arrange the chicken on the foil with the marinated mixture and dot the butter on top. Fold the foil around the chicken and seal and bake for about 45 minutes or until done. Serve immediately with lemon wedges and green chilies.

Ingredients:
1 lb ground beef
1/4 cup flour
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon minced onion
1/2 teaspoon paprika
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon cumin
1/2 cup water

Directions:

1 Combine all ingredients in a bowl except water.
2 Mix well as you would in making a meat loaf.
3 Pour water into pan and add meat.
4 Stir occasionally breaking up any large chunks.
5 Cook for about 5-10 minutes or until done.

About this recipe: My family adores rice porridge as a special breakfast treat. It's basically one part rice to two parts water. Brown rice also works well but it takes a little longer to cook. You can jazz it up with berries, nuts or add a drizzle of honey.
Ingredients

Serves : 4

200g short grain rice
475ml water
2 or 3 tablespoons caster sugar, or to taste
a pinch of salt
225ml milk
2 tablespoons butter
Directions

Prep: 5min  ›  Cook:  15min  ›  Ready in: 20min

Place the rice in a fine mesh sieve and rinse under cold water.
Bring 475ml water to the boil; stir in rice to prevent it sticking to the bottom or the sides, then cook without stirring for 10 minutes, or until water has completely evaporated.
Add sugar and salt to taste. Stir in milk and cook for another 3 minutes.
Turn off the heat; stir in butter and let stand for 2 or 3 minutes before serving.

Ingredients:
Mutton 1 1/2 lb
Turmeric powder 1 tsp
Dry red chillies 20
Coriander seeds 3 tbsp
Garlic cloves 20
Sour curd 1/2 pint
Onions 4
Juice 1 ripe lemon
Cardamoms 6
Ghee 6 tbsp
Cloves 6
Cinnamon 2 sticks
Coriander leaves 1 small bunch
Ginger 4 inch piece
Salt to taste

Method:
1. Wash and cut up the meat into 2-inch cubes.
2. Slice the onions into thin long pieces.
3. Finely slice ginger and garlic separately.
4. Heat a tsp of ghee on a tava and roast the chilies till dark in color
5. Fry the coriander seeds, garlic and ginger separately in the same way, using just 1 tsp ghee for each ingredient.
6. Keep these fried spices aside.
7. In a large saucepan, heat the remaining ghee and fry the onions till golden brown and crisp, drain and keep aside.
8. Now add the cloves, cardamoms and cinnamon to the ghee and fry, put in the mutton and turmeric powder and salt.
9. Cover and cook till the meat is half cooked.
10. Pour a little water on the lid of the saucepan while cooking to avoid the meat sticking to the bottom.
11. Use a saucepan with a plate shaped lid.
12. Add cord and remaining spices. Mix and cook on a low heat till meat is tender.
13. If necessary, add a cup of warm water, just before serving mix in the lemon juice and fried onion slices.
14. Serve garnished with chopped coriander leaves.

Method:
•First of all take a fry pan add oil then add ginger garlic (chopped), green chilies (chopped) and mix it nicely than add yogurt in it and 1 cup of water.
•Mix up all the items well put cap on the pan and leave it till beef gets soften.
•Get a cup and add Saunf ( Fennel seeds), Jeera ( Cumin seeds ), Kalonji ( Black Onion seeds ), Methi seeds ( Fenugreek seeds ), Rai ( Black Mustard Seeds ), salt, red chilly and blend it properly.
•When the ingredients in the Bowl get to add the dry mixture and mix and cook over low heat.
•Please add the lemon juice and green chilies and cook for a few minutes over low heat, get out of the bowl and garnish with the cilantro, and its ready to serve.

1 pound of Minced Ground Beef (Keema) (Halal)
1 ½ tsp. of Jalapeno Peppers (chopped)
4 slices of Tomato
½ tsp. Cumin Powder (Pisa Zeera)
½ tsp. Salt
1/8 tsp. Black Pepper (Pisi Kaali Mirch) (fresh ground)
¼ cup (1 ounce) Monterey Jack Cheese (shredded)
4 Hamburger Buns

Method:
Combine ground beef, jalapeno peppers, cumin, salt and pepper; mix lightly but thoroughly. Divide beef mixture into 4 equal portions; shape into ½ inch thick patties, 4 inches in diameter.

Place patties on grid over medium coals. grill 7 to 9 minutes, turning once. Sprinkle 1 tablespoon cheese on each burger 1 minute before end of cooking time.

Place tomato slice on bun bottom; top each with grilled burger and cover with roll top. To check temperature, cautiously hold hand about 4 inches above coals, Medium coals will force removal of hand in 4 seconds.
